Why does some tallow go grainy or crumbly?
It usually comes down to how the fat is cooled. When tallow sets too quickly, it forms hard crystals that feel gritty and sandy and tend to crumble. We render slowly in small batches, cool it with care and whip it by hand, so it stays silky and smooth instead of grainy.
Do I have to melt it in my hands first?

Will it feel heavy or greasy?
